Small town America is alive and well, as is evidenced by The Green Cow, an ice cream shop and eatery located in the town of Colfax. You can practically hear John Mellencamp singing as owners Pete Collis and Luke Markham explain how they make everything on the menu from only the freshest local ingredients. In fact, all 25-plus flavors of ice cream are all handmade in the back of the shop. “We don’t skimp on the good stuff” has become their catchphrase, and a statement The Green Cow surely lives up to. There’s even a plan in the works to start retailing their signature ice cream to grocery stores and restaurants around the area. With more than a decade in the food business, the pair of owners decided they wanted to do something eco-friendly and sustainable that people could truly enjoy. “That’s the way we live our lives and that’s the way we wanted to run our business,” says Pete. They’ll whip up hamburgers, sandwiches, fries, cheese curds, root beer, and ice cream, all made to order with those fresh local ingredients. Dine alfresco or take your meal to go – either way you can’t go wrong at this summer destination. Every bite is a unique taste of the area.
