Informalist Chef Featured on Wisconsin Foodie

Wisconsin Public TV’s Wisconsin Foodie is featuring Eau Claire eatery The Informalist – and in particular, Chef Amy Ann Huo – in a new episode. Huo talked about working with local ingredients at the Informalist, specifically mentioning Stephanie Schneider from Together Farms. The pair has been working together for a few years. “It is because of Stephanie that I am hopeful for the future of regenerative food production in the Chippewa Valley,” Huo said. Amy’s goal is to create a food production system sustainable for business and the environment. “My approach is to support the farmers and producers who are doing it in the best way that they know how,” Huo said. “Working with local farmers, and extremely seasonally, means that one radish might taste wildly different than the next based on nothing but variable weather. It’s important that we embrace these changes and understand that it is our duty as chefs to work with farmers to create the market that can be supported locally.” With that said, Huo encourages people to support local producers. “Vote with your dollar.
