The Informalist, adjacent to the Lismore Hotel in downtown Eau Claire, recently announced A new executive chef, Joseph “Joey” Sieg. Originally from Osseo, Sieg has 16 years of experience in the local culinary industry alongside an education in business management from Chippewa Valley Technical College. He worked as general manager of Osseo Golf Club, and eventually as sous-chef at The Local Lounge before coming on with the Informalist. “With his great experience and unique take on menu creation and food, Chef Sieg is perfect to push the boundaries of what is possible at The Informalist,” said Pete Bauchle, general manager of the Lismore Hotel. The latest Informalist menu features comfort foods such as Wisconsin corn fritters and soft pretzels. Keep an eye out for seasonal eats as Sieg explores local fare including ramps, morels, and rabbit. “We are sure he will continue to establish the restaurant as one of the finest spots in the Northwest Wisconsin area,” Bauchle said.
