Featuring tacos, super tacos, burritos, super burritos, chips and cheese, taco salad, and fiesta chips, you won’t walk away hungry from Rosy’s Texas Outpost this year at their first Food Truck Friday. Founded by Sharon Cronin, this tasty Eau Claire-based taco stand was purchased by Leonard Maland around 20 years ago, and he’s transformed it into the beloved family-run food truck it is today with the help of his children and family member. You might know Rosy’s from Country Fest and Rock Fest, but they’ve also served up grub at Pure Water Days in Chippewa Falls, the Lake Hallie Food Festival, and the Half Moon Dragon Boat Festival in Eau Claire. If you’re feeling adventurous and hungry for something with a little extra kick to it, their spicy menu features sauces that are mild, medium, hot, and “hurt ya.” Their top food item is “hands down” the super burrito and fiesta chips, Vivian Maland from Rosy’s said. They also offer gluten-free chicken for folks who may not like beef or need that gluten-free option for just $1 extra. They’re looking to expand their operations with the hope to pass down their business to their kids. But for now, they’re aiming to serve up some good eats for pretty cheap at Food Truck Friday. Volume One’s Food Truck Friday event series – presented in partnership with Silver Spring Foods – kicks off its second season on Friday, May 3, along the Great Lawn in downtown Eau Claire’s Phoenix Park. Each month from May to September, as many as 10 food, snack, and drink establishments will open for business for lunch and dinner (11am-7pm), providing the opportunity to sample and feast upon the work of multiple mobile chefs.
